Favorite Ingredient Friday



Peanut Butter Cookies

Ingredients
1. 1/2 cup butter, softened
2. 1/2 cup peanut butter
3. 1/2 cup granulated sugar
4. 1/2 cup packed brown suger, or 1/4 cup honey
5. 1/2 teaspoon baking soda
6. 1/2 teaspoon baking powder
7. 1 egg
8. 1/2 teaspoon vanilla
9. 1/4 cups all purpose flour
10. granualted sugar in a bowl

Directions
1. In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed for 30 seconds. Add the granualated sugar, brown sugar, baking soda and baking powder. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. If necessary, cover and chill dough until it's easy to handle.

2. Shape dough into 1-inch balls. Roll in additional granualted sugar in bowl to coat. Place 2 inches apart on an ungreased cookie sheet. Flatten by making crisscrosse marks with the tines of a fork. Bake in oven on 375 degrees for 7-9 minutes or until bottoms are lightly browned. Transfer to wire rack and let cool.

Wow, Jessica, I was just staring in my cupboard yesterday, noticing that I had a lot of peanut butter. I thought, 'I need to find a good peanut butter cookie recipe and use some of this up."

Oooh yummy peanut butter cookies!

When my great aunt was still alive (she died in 2nd grade) I would go over to her house every Sunday after church and we'd make peanut butter cookies together. This recipe just flooded me back with a lot of memories. :)

You can never go wrong with peanut butter (unless your my youngest 'cause you're allergic to it). My oldest loves peanut butter. I'm forwarding the recipe to his granny to make for him.

Hi There. I love your blog! I too, have a 2 year old with DS and let me tell you, there isn't a day that goes by where I am not grateful for him, his love, humor, intelligence, personality, feistyness, determination, wit, alertness etc. We also were going to get him tested for MDS because he was so "early" with things and didn't fall into typical "DS" characteristics. However, we passed eventually on that because it really makes no difference. He is what he is, and he's doing amazing! He is walking and just to add to your hopefullness, he started walking while holding our hands when he was 11 months. He took his first steps when he was one. However, he didn't really "master" walking until about 2. He just turned 2. You will see that it really doesn't matter "when" it matters that he "DOES!". I also thought "No way is he walking when is is 18 months, or 2 or 3 etc." My daughter walked at 10 months and so will he. Well, he walked when he was ready, but the important part is every bit of the way is exciting, fun and funny! I too, have a blog for other parents with children with DS to read and hopefully get encouragement from! My best wishes to you! Noelle

PB cookies are my favorite, which is why I don't make them very often. I would just sit and eat one right after the other until I discovered I was stuffed. These look great though and so tempting...☺
