Favorite Ingredient Friday

1. 3 to 4 lb. pork roast or pork ribs (either)
2. 1 lg. onion (chopped)
3. 1 tsp. salt
4. 1/2 tsp. pepper
5. 2 pts. sauerkraut

-Place meat in roaster. Place sauerkraut smothered over, salt, pepper and onions over top. 2 quarts water over. Bake at 325 degrees for 3 hours.

My mother cooks this every year on New Years, we've always heard that it brings good luck for the New Year. And we always serve it with mashed potatoes.

Isn't it funny the traditions for the New Year's day meal? I've never heard of sauerkraut being lucky, but I was raised that you must eat your greens on that day. :o)

My mother, who has been gone now for about 13 years, always made pork and sauerkraut for New Years. She always said, "out with the old, in with the new". Actually, that is kind of gross, isn't it?
